Lavender is easy to grow, and we love the scent, the mounded shape of the plant, the silvery tinge of the foliage, and the way it never complains when we forget to water. This White variety is a nice change from the traditional purple lavender, and it sets off the foliage nicely.
Lavender is an easy to use medicinal and culinary herb, and is part of our Medicinal Garden. In the kitchen, you can harvest the leaves and steep them in vinegar or olive oil to make a lavender flavored dish. For medicinal purposes, lavender oil is often used for it's calming properties. To create a lavender oil for this purpose takes a bit more time, but is not difficult. Here's how: harvest the flowering stems, and tie the bunch with a rubberband, and hang it upside down in a warm dry area. Once it is dry, bruise the flowers and leaves in a jar to release their fragrance, then fill the jar with unscented oil such as jojoba and cover it. Let the oil infuse for 2-6 weeks, then strain. You can also save the dried flowers in a bag to perfume the house with the calming scent.
Planting conditions: Likes regular water while blooming, but happy in hot and dry conditions, and drought tolerant once established. Very easy to grow.
Sun: Full sun is ideal.

Perennial: Lavender is perennial, and will come back each year, in zones 5-11.
